A multitude of specialties
 
The vineyard of Henri Valloton offers a wealth of different specialties. All the famous grape varieties of Fully are to be found there – Petite Arvine, Gamay, Ermitage, Fendant – as well as the Païen, the Cabernet Sauvignon and the very local Durize, also known as Vieux rouge of Fully. Besides his passion for the Petite Arvine, Henri Valloton admits to have a  soft spot for well balanced red wines like the Syrah, Merlot, Pinot Noir stemming from his old vineyards as well as for the Humagne rouge. “I am also quite interested in Sauvignon blanc”, says he who currently possesses planted grape varieties comprising two thirds of specialties.
 
As concerns wine making, the house has a clear direction: search for typical varieties and soils, elaboration of dry wines or definitely over-matured ones. “I am the owner of functional installations, however without particular sophistication. Breaking the crust of the reds in the vat is done manually and I do not use a reducer “,says the wine producer who, as the respect of the soil demands, does only little alterations to his wines. “I currently produce three Fendant varieties, the same number of Gamay, two Arvine … The differences inherent to the soils have to come forth”, adds he with conviction, without failing to underline that the styles may vary depending on the characteristics of the soil, as is the case for his various Gamay, just to single out this example.
 
 
 
Superior requirements
 
Henri Valloton shows ambition for his wines. He willingly abides by superior requirements to obtain cdistinctive quality labels as is the case for his Petite Arvine Fully Grand Cru or for his over-matured Ermitage marked Grain Noble ConfidenCiel. The man is also a perfectionist in the vineyards where he performs integrated production while, at the same time, trying to go even further: “I get rid of residual herbicides and aromatic herbs, but thyme and hyssop grow on the banquettes. “
 
Our exceptional wines abide, of course, by the AOC criteria, but also by other requirements such as those of Grand Cru de Fully, the Grain Noble chart and/or are wines matured in casks.
